The third annual Amelia Island Garden Show will roll out nature's brightest colors on Saturday and Sunday in Central Park, 1200 Atlantic Ave., Fernandina Beach.

HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake

Prep time: 15 Minutes

Skill level: Beginner

**Ingredients

2 cups sugar

1-3/4 cups all-purpose flour

3/4 cup HERSHEY'S Cocoa

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

**Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes then frost with HERSHEY'S PERFECTLY CHOCOLATE FROSTING!!!

(1 stick) butter or margarine

Made with ground turkey, this meat loaf is lighter and more moist than traditional beef and pork varieties, yet every bit as flavorful. Serve it with mashed potatoes and your family's favorite vegetable to complete the meal.

Ingredients
2 pounds lean ground turkey
1 cup fine Italian-style bread crumbs
1/2 cup ketchup
1 cup grated mozzarella
1 cup finely chopped onion
2 cloves garlic, minced
1/2 cup chopped fresh parsley
2 teaspoons dried basil
1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
2 eggs, lightly beaten
2 cups pasta sauce

Instructions

1.Heat the oven to 350 F. Oil a large jelly roll pan or a roasting pan and set it aside.
2.Combine all the ingredients except the pasta sauce in a large mixing bowl. Using your hands, toss the ingredients lightly to evenly distribute them, then knead the mixture well.
3.Transfer the mixture to your baking pan, shaping it into a loaf about 12 inches long and 5 inches wide. Bake it for 40 minutes, then remove it from the oven and spread a cup of pasta sauce over the top. Keep baking the meat loaf until it is cooked through, about 35 minutes more. Allow the loaf to sit in the pan for 15 minutes before slicing it. Serve it with more pasta sauce, if desired. Makes 8 or more servings.

Is it possible to eat for $7 or less a day? At least one New Yorker, Zack, an aspiring comedian, says he does it. Here's how, along with more strategies anyone can use:

Buy in bulk. Zack drives to the suburbs in New Jersey to shop at bulk retailers, such as Sam's Club. He fills large duffel bags of food to bring back to the city and estimates it saves a significant chunk of change each month.

Stockpile supplies. Cans of beans and tomatoes are cheap, store easily, and make quick, filling meals.

Compare prices. For some items, such as fruit, buying from street vendors turns out to be cheaper than shopping at Manhattan grocery stores.

Cook big. Zack makes lots of soup, chili, and other big dishes that can turn into leftovers or even go into the freezer for a future meal. To spruce up the dishes and make them even bigger, he often adds pasta or rice.

Plan ahead. By loosely deciding in advance which meals to cook on which nights, Zack avoids getting home from work--starving--and eating out just because it seems easier.

Shop discount. A survey from Washington Consumers' Checkbook shows that families that would spend $150 a week if they shopped at average-priced chains, such as Safeway, could save $1,326 by shopping at the discount store Bottom Dollar Food--or spend $3,510 more by shopping at Whole Foods. While the survey focused on Washington, D.C.-area stores, the same principle applies across the country: Shops sell food, and often the exact same name brands, for very different prices. By switching from Whole Foods to Bottom Dollar Food, customers could save almost $5,000 a year. That figure might be enough to scare you off those pricey organic brands for awhile.

Build your meals around rice, noodles, or other grains, advises the Agriculture Department's recipe book. A casserole, for example, should be heavy on rice and vegetables. The feds offer a beef-noodle casserole along with stir-fried pork and vegetables with rice that demonstrate this technique. The University of Wyoming's cookbook suggests heavy use of oatmeal, and includes an oatmeal cookie recipe that incorporates applesauce. Kansas State University describes "mom's breaded tomatoes," which mixes bread and flour into cooked tomatoes to make the vegetable dish more filling.

Make use of leftovers, and your freezer. The Agriculture Department's recipe book urges users to make a beef pot roast according to its relatively simple recipe, then freeze half of it. It recommends the same technique with baked meatballs and turkey chili. The University of Wyoming suggests using canned peaches for pancakes, then freezing the unused juice in ice cube trays for future ice teas.

Bake "fried" chicken. A variation of "baked" fried chicken occurred over and over again in university cookbooks. The basic recipe: Coat chicken pieces in breading and Parmesan cheese along with spices, then bake in the oven. That way, you avoid the grease of fried chicken takeout.

Avoid prepackaged items. Instead of buying hummus, grated cheese packages, or frozen meals, make these items yourself to save money as well as cut down on sodium.

Go meatless. The university recipe books don't say this explicitly--probably because they want to avoid alienating farmers--but avoiding meat, or even just cutting back on it, saves a lot of money. Instead of beef or chicken, substitute beans and eggs.

Stop wasting. The Agriculture Department recommends stocking up on food that keeps well, such as canned orange juice or dry goods. But be careful with fruits and vegetables, even if they're on sale, to prevent waste. Home cooks stuck with extra eggplant or flounder can avoid wasting food by using websites such as Allrecipes.com and the FoodNetwork.com to search for dishes based on the ingredients they have at home.

Get inspired. Food blogs such as Smitten Kitchen and Cooking with Amy offer practical recipes for all budgets, along with photos and step-by-step directions.

These sweet and peppery chicken wings are an excellent appetizer for a Super Bowl party or other casual entertaining occasion.

IngredientsGarlic Chips
1/2 cup grapeseed oil
15 garlic cloves, very thinly sliced
Salt
Chicken Wings
4 pounds chicken wings
1/2 cup sesame oil
2 tablespoons minced garlic
Salt and freshly ground black pepper
2 cups cider vinegar
1-1/2 cups sugar
3 tablespoons cracked black pepper
5 garlic cloves, crushed
1 tablespoon red pepper flakes

Cooking InstructionsMake the Garlic Chips: Heat the oil in a medium skillet over medium-low heat. Add the garlic and fry until lightly browned, about 5 minutes. Using a slotted spoon, transfer to paper towels to drain and sprinkle with salt. Set aside.
Make the Chicken Wings: Preheat the oven to 425 degrees F. Line a large baking sheet with aluminum foil.
In a large bowl, combine the oil and minced garlic. Add the chicken wings and turn to coat. Season with salt and pepper to taste. Place the chicken wings on the baking sheet in one layer and bake, turning once, until cooked through and lightly browned, about 30 minutes.
Meanwhile, in a medium saucepan, combine the vinegar, sugar, 1 cup water, the cracked pepper, crushed garlic, and red pepper flakes. Bring to a boil, then reduce the heat and simmer until the mixture becomes syrupy, about 30 minutes. Transfer the cooked chicken wings to a large bowl and toss with the glaze.
Divide the wings among 4 serving plates. Garnish with the garlic chips and serve immediately.

A Wreath for All Seasons!!! Fun ideas for FALL!!!

Go beyond the holidays by hanging ornaments that celebrate achievements, announce happy events like birthdays and graduations, or cheer on a team. Add or remove ornaments each season, and the fun — and that terrific first impression — can last all year long.

Materials
Embroidery hoops (see tip below)
Solid-color fabric or canvas
Paintbrush and paint, paint pens, or other decorating tools (see instructions for details)
Outdoor Mod Podge
Greenery, faux berries, or other seasonal extras
Grapevine wreath
Floral wire

Instructions

1.For each ornament, measure the hoop, then cut a fabric circle that's an inch larger in diameter. Sandwich the fabric between the rings of the hoop, then pull the fabric taut and tighten the screw. Trim any excess fabric.

2.Decorate the ornaments (see ideas below). Let them dry, as needed, then apply a coat of Outdoor Mod Podge for weatherproofing and let it dry. Attach the ornaments and greenery or other extras to the wreath with lengths of floral wire. For the greatest durability, hang the finished wreath in a protected spot.

3.Stamp simple shapes by applying acrylic paint to a halved apple or a leaf, then pressing it onto the fabric (practice on paper first). Add details with a paint pen.

4.For a 3-D effect, use strong glue, such as Crafter's Pick The Ultimate, to adhere collage materials like the fishing line shown here (made from a bit of cord) and metal charms.

5.Acrylic paint and a brush are great for creating bold images like our pie design, and for livening up the hoop frames (paint them before adding the fabric). For more detailed designs, such as our horse drawing, use fabric markers or paint pens.

6.Create ornaments from photos — like the dog portrait shown here — with inkjet-printable cotton sheets (we used Jacquard brand, available at craft stores). Follow the package instructions to transfer a digital shot or scanned drawing to the fabric, then use a paint pen for extra flourishes.

Tips:The embroidery hoops used here are 3 to 5 inches wide and cost $1 to $2 each at craft or fabric stores. For another creative hoop craft, check out our hair-accessory holder.

INGREDIENTS FOR CHIPS:

5 (6-inch) flour tortillas
2 tablespoons butter, melted
1/2 teaspoon cinnamon
1 1/2 tablespoons sugar

Instructions

1.Combine all the dip ingredients in a bowl, then cover and refrigerate the mixture until chilled.
2.Brush the tortillas with butter, then cut them into wedges.
3.Arrange the wedges on a greased baking sheet, sprinkle with cinnamon and sugar, and bake at 350º F until golden brown, about 10 minutes. Let them cool before serving. Serves 4 to 6.

Casey Anthony acquitted of killing daughter

..ORLANDO, Fla. (AP) — Casey Anthony was found not guilty Tuesday of killing her 2-year-old daughter in a case that captivated the nation as it played out on national television from the moment the toddler was reported missing three years ago.

Anthony, 25, wept after the clerk read the verdict, which jurors reached after less than 11 hours of deliberation over two days. She was charged with first-degree murder, which could have brought the death penalty if she had been convicted.

Instead, she was convicted of only four counts of lying to investigators looking into the June 2008 disappearance of her daughter Caylee. Her body was found in the woods six months later and a medical examiner was never able to determine how she died.

She will be sentenced by the judge on Thursday and could receive up to a year in jail for each lying count.

After the verdict was read, Casey Anthony hugged her attorney Jose Baez and later mouthed the words "thank you" to him. Prosecutor Jeff Ashton, meanwhile, shook his head in disbelief.

Anthony's parents left the courtroom without speaking to her as the judge thanked the jury.

"While we're happy for Casey, there are no winners in this case," Baez said at a news conference after the hearing. "Caylee has passed on far, far too soon and what my driving force has been for the last three years has been always to make sure that there has been justice for Caylee and Casey because Casey did not murder Caylee. It's that simple. And today our system of justice has not dishonored her memory by a false conviction."

Anthony's attorneys claimed that the toddler drowned accidentally in the family swimming pool, and that her seemingly carefree mother in fact was hiding emotional distress caused by sexual abuse from her father.

Prosecutors contended that Caylee was suffocated with duct tape by a mother who loved to party, tattooed herself with the Italian words for "beautiful life" in the month her daughter was missing and crafted elaborate lies to mislead everyone from investigators to her own parents.

Captivated observers camped outside the courthouse to jockey for coveted seats in the courtroom gallery, which occasionally led to fights among those desperate to watch the drama unfold.

Anthony did not take the stand during the trial, which started in mid-May. Because the case got so much media attention in Orlando, jurors were brought in from the Tampa Bay area and sequestered for the entire trial.

Baez conceded that his client had told elaborate lies and invented imaginary friends and even a fake father for Caylee, but he said that doesn't mean she killed her daughter.

"They throw enough against the wall and see what sticks," Baez said of prosecutors during closing arugments. "That is what they're doing ... right down to the cause of death."

He tried to convince jurors that the toddler accidentally drowned in the family swimming pool and that when Anthony panicked, her father, a former police officer, decided to make the death look like a murder by putting duct tape on the girl's mouth and dumping the body in woods about a quarter-mile away.

Her father firmly denied both the cover-up and abuse claims. The prosecution called those claims "absurd," saying that no one makes an accident look like a murder.

Lead prosecutor Linda Drane Burdick concluded the state's case by showing the jury two side-by-side images. One showed Casey Anthony smiling and partying in a nightclub during the month Caylee was missing. The other was the tattoo she got a day before her family and law enforcement first learned of the child's disappearance.

"At the end of this case, all you have to ask yourself is whose life was better without Caylee?" Burdick asked. "This is your answer."

Prosecutors hammered on the lies Anthony, then 22, told from June 16, 2008, when her daughter was last seen, and a month later when sheriff's investigators were notified. Those include the single mother telling her parents she couldn't produce Caylee because the girl was with a nanny named Zanny — a woman who doesn't exist; that she and her daughter were spending time in Jacksonville, Fla., with a rich boyfriend who doesn't exist; and that Zanny had been hospitalized after an out-of-town traffic crash and that they were spending time with her.

Heat Safety: Avoid becoming Dehydrated!

With summer officially upon us, and as temperatures soar into the triple digits, Dawn Allicock, M.D., M.P.H., Director of the St. Johns County Health Department, reminds everyone take precautions against dehydration and heat exhaustion.

Signs of dehydration include thirst, weakness, nausea, muscle cramps, feeling dizzy and light headed, decreased urine levels and/or urine that has a strong odor or is darker than normal, tiredness, sluggishness, irritability and headaches. All, some, or none of these signs may be present, so the best way to avoid dehydration is to monitor water or fluid intake, and modify activity or reduce the length of activity according to weather conditions.

“Don't wait for the dry mouth, flushed skin, headaches, lightheadedness or fatigue. You can prevent dehydration by drinking fluids throughout the day,” said Dawn Allicock, M.D., M.P.H., Director of the St. Johns County Health Department. “Avoid becoming dehydrated by staying out of the direct sun, wearing light colored loose fitting clothing, limiting physical activity, and using fans when available.”

If you suspect you are becoming dehydrated, get to a cool or shady area and sip cool water or fluids. If your condition does not improve, seek medical attention immediately.

To avoid becoming dehydrated, it is important to drink plenty of fluids, especially water, even if you don’t feel thirsty. This is particularly true on days when temperatures reach 90°F and higher. Depending upon your physical activity and heat exposure during hot weather, it’s a good idea to drink more water. Persons who have medical conditions such as kidney and heart disease, who require a fluid restricted diet, or who have problems with fluid retention should consult a physician before increasing their consumption of fluids.

Babies from birth to 6 months: Healthy infants normally do not need extra water. On a hot day, a small amount of water may be needed, but check with your physician on how much to give.

Babies from 6 - 12 months: Breast or formula-fed babies that are receiving solid foods should also be receiving water.

Children 12 months and older: Should be reminded to drink fluids, preferably water throughout the day. They should be encouraged to drink more on hot days.

Adults: Should drink fluids, preferably water, throughout the day. When exposed to temperatures reaching 90°F and higher, depending on physical activity level and heat exposure, adults should drink even more water.

Heat exhaustion is a form of heat-related illness that can develop after exposure to high temperatures and inadequate or unbalanced replacement of fluids. Those most prone to heat exhaustion are elderly people, people with high blood pressure and people working or exercising in a hot environment. Warning signs of heat exhaustion vary, but may include the following:

· Heavy sweating

· Paleness

· Muscle cramps

· Weakness

· Dizziness

· Headache

· Nausea or vomiting

· Fainting

· Skin - May be cool and moist

· Pulse rate - Fast and weak

· Breathing - Fast and shallow

If heat exhaustion is untreated, it may progress to heat stroke. Seek medical attention immediately if symptoms are severe, or the victim has heart problems or high blood pressure. Otherwise, help the victim to cool off and seek medical attention if symptoms worsen or last longer than one hour. If heat exhaustion is suspected, cooling measures that may be effective include the following:

· Drink cool, nonalcoholic beverages, as directed by your physician

· Rest in an air-conditioned environment

· Take a cool shower, bath or sponge bath

· Wear lightweight clothing
· Prevent sun burn (which damages the skin's ability to dissipate heat) by wearing sunscreen of 30 SPF.

Community Gathers to Honor Firefighters, say Goodbye to 2 Lost

There is a firefighter appreciation event tonight to honor the crews battling wildfires in Columbia County and to remember two men killed on Monday.

Around 6 p.m., crews and the community are expected to gather at Deep Creek Community Center in Lake City.

Josh Burch, 31, of Lake City, and Brett Fulton, 52, died while fighting the Blue Ribbon Fire in Hamilton County, according to a statement from the state Department of Agriculture and Consumer Services.

Firefighters Robert Marvin and Stephen Carpenter were taken to Lake City Hospital and Shands Gainesville to be treated for smoke-related injuries, then released Monday night. Their ages and tenures were not released.

Investigators from the Division of Forestry and the Office of Agricultural Law Enforcement are investigating what led to the deaths and injuries at the fire, which had been burning since June 16.

Colcannon (Irish Potato Salad)

Ingredients

5 russet potatoes
1/2 cup unsalted butter
1/4 cup whole milk
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
4 large shallots, thinly sliced
1 large leek-halved and thinly sliced
1 bunch kale, stemmed and coarsely chopped
1 head napa cabbage, cored and coarsely chopped
1/4 teaspoon freshly grated nutmeg
1/4 teaspoons salt
2/3 cups chopped green onion tops

Directions

Cut and steam the potatoes until tender. Return to the still hot pot and add 1/4 cup butter, milk, kosher salt and 1/4 teaspoons pepper. Mash together.

Melt the remaining butter in a large pot over medium heat. Add shallots and leeks. Saute until they begin to soften. Add the kale and toss until soft and wilted but still bright green, about 3 minutes. Add the cabbage and toss until tender-crisp, about 8 minutes. Sprinkle with nutmeg, salt and the remaining pepper.

Mix the cabbage and mashed potatoes together well. Sprinkle with the green onion slices before serving.
